Catering
NVQ Hospitality and Catering is delivered in the EMEC training Kitchen by Mrs Ward. The aim of the courses is to provide the students with an enthusiasm for cooking and give them skills to make them employable in the catering industry. We have a mixture of domestic and commercial equipment allowing the students to learn to cook and get experience of the world of commercial catering.
Students at both Level 1 and Level 2 are taught a wide range of practical skills to give them the knowledge to work in a commercial kitchen.
They cover units on meat and poultry, bread and cakes, desserts and pastries and preparation and cooking of vegetables.
They are taught hygiene and safety and how to work as a brigade in a catering kitchen as they work to produce the catering requirements of the UCA EMEC building. This ranges from school meals to hospitality events for the public who are using the conference facilities.
As part of the courses the students work in the school kitchens and the EMEC coffee shop and plan and present meals such as the annual Christmas dinner that the residents of the local care home attend.
The courses are assessed by continuous assessment and end of unit assessment tests.
